The ultimate veggie breakfast bagel, with baby spinach, tomato, avocado and cress. Topped with a poached egg and hot sauce!
Ingredients
2 whole grain bagels
2 small handfuls of baby spinach
1/2 an avocado, sliced
2 thick slices of a large tomato
A couple of slices of red onion (optional)
2 large free range eggs
2 small handful of cress
Hot sauce
Sea salt & black pepper
1 tsp apple cider vinegar
