Paleo Plantain Drop Bicuits
What I missed greatly when I became a paleo dieter was having my grandmother’s biscuits for breakfast. It felt like a mini deprivation, but these paleo breakfast plantain biscuits solved that problem for me — quick, fast and in a hurry! They are delicious and fill the kitchen with a sweet aroma that beckons everyone in the house to come and indulge themselves.
2 brown plantains
3 tablespoons coconut oil
3 eggs
3 tablespoons pure maple syrup
1 tablespoon coconut milk
1 1/2 teaspoons lemon juice (or 1/2 teaspoon cream of tartar)
1/4 cup melted coconut oil
1 teaspoon cinnamon
1/8 teaspoon salt
1/4 teaspoon baking soda
3 tablespoons coconut flour
Raisins (optional)
