The great thing about a paleo loaf is you can make it ahead, then just cut yourself a slice at breakfast time. For those mornings when you just want to grab something tasty instead of having to cook, this banana bread is perfect.
Ingredients
2 1/2 cups mashed banana
1/2 cup almond butter
4 eggs
4 tablespoons melted grass-fed butter or coconut oil
1/2 cup coconut flour
1 tablespoon ground cinnamon
1 1/4 teaspoons baking soda
1 1/2 teaspoons lemon juice
1/4 cup chopped walnuts
1/8 teaspoon sea salt
1 teaspoon vanilla extract
