A healthier version of carrot cake, loaded with dried fruit, nuts and carrots, and topped with a creamy maple frosting.
Ingredients
1 cup almond meal
1 cup coconut flour
2 tsp baking soda
1 tsp sea salt
cinnamon, ginger, nutmeg
1/2 cup melted coconut oil
1/2 cup coconut sugar
1/2 cup pure maple syrup
5 eggs
2 tsp pure vanilla extract
3 cups finely chopped carrots
3/4 cup desiccated coconut
1 cup dried fruit
1/2 cup chopped pecans
1 1/2 cup boiling water
