KUTCHI ALOO RECIPE
I chose a recipe which is almost a “forgotten recipe” nowadays. The recipe is originally from Kutch, Gujrat and called Kutchi aloo (potatoes in kutchi style). This is a very simple and easy recipe. I don’t know why it is just forgotten. Traditionally this recipe was made on old-classic gas stove, i.e. Chula and because of this chula, recipe got an exotic smokey flavor, which makes this simple dish dramatic. It has also a unique flavor of asafoetida (hing). I made this recipe on a regular gas stove. It requires boiled potatoes and onions as a main ingredients.
Potato, boiled – 2 medium
Salt – to taste
Onion – 1 medium
Red chili powder – 1 tsp
Turmeric powder – a pinch
Oil -1 tsp
Cumin – ¼ tsp
Mustard seeds – ¼ tsp
Asafoetida – ½ tsp
Lemon juice – ¼ tsp
Garam masala – a pinch (optional)
Coriander leaves – for garnishing
