These Gluten-free Carrot Muffins are made with rice flour, rolled oats, no butter or oil and loaded with carrots, nuts, Greek yogurt and semi-sweet chocolate chips. They are also delicious with a warm cup of coffee!
Ingredients
1¼ cups rice flour
1 cup old fashioned rolled oats
1½ tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
¼ tsp salt
2 large eggs
½ cup plain Greek yogurt
¼ cup maple syrup
¼ cup brown sugar
¼ cup almond milk (or any other milk you prefer)
2 tsp vanilla extract
1 cup grated carrot
½ cup chocolate chips
1 cup chopped nuts (walnuts, Brazil nut, cashew, almond)
