This Baby Greens Salad with Couscous and Herb Vinaigrette is light, fresh, and full of flavor!
Ingredients
4 cups mixed baby greens (I used spinach, kale, and Swiss chard)
1/2 cup dry whole wheat couscous
1/2 cup water
1/2 cup celery, thinly sliced
1/2 cup cucumber, thinly sliced and quartered
1/4 cup pine nuts
for the herb vinaigrette
1/2 cup extra virgin olive oil
3 tablespoons red wine vinegar
juice of half a lemon
1/2 cup fresh herbs (I used parsley, dill, and a few sprigs of rosemary)
1 tablespoon maple syrup or honey
salt and pepper, to taste
