A delicious, chewy, and gluten free thumbprint cookie with a sweet and tart raspberry filling.
Ingredients
½ cup + 2 tablespoons coconut oil
½ cup honey
1 egg, beaten
½ teaspoon sea salt
1 tablespoon pure vanilla extract
2½ cups almond flour
¼ teaspoon baking soda
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
FILLING:
Jam of your choice such as raspberry, orange, apple butter, blackberry, strawberry, etc.
