Apple Baked French Toast (Gluten-Free)

This baked French toast is sweet and moist, even though it contains minimal sugar and no cream or butter. Eat it for breakfast, eat it for dessert – anything goes!
If you would prefer, replace the gluten-free bread with regular bread that is 2-3 days old.
Ingredients
2 red apples
2 green apples
1 tablespoon maple syrup
3 tablespoons water
¼ teaspoon dark molasses
1 teaspoon ground cinnamon (divided)
4 eggs
2 cups whole or low-fat milk
2 teaspoons vanilla extract
2 Medjool dates, pitted and chopped
6 cups cubed gluten-free bread (14oz. or 400g)
½ – 1 tablespoons Demerara (raw) sugar
