250 g tomato passata
2 garlic cloves
1 small yellow onion
1 tsp Herbes de Provence
1 aubergine
1 large red onion
1 courgette
2 tomatoes
1 tbsp garlic-infused olive oil
1 tsp dried basil
fresh basil to garnish
salt and pepper to taste
