Banana Coconut Bread Baked Oatmeal
Banana bread meets baked oatmeal – plus coconut! This batch of baked oatmeal includes plenty of shredded coconut, walnuts and chocolate chips to brighten your morning. If you’re particularly against chocolate chips in your oatmeal, try replacing them with raisins or fresh berries.
2 large, very ripe bananas
½ cup Chobani coconut Greek yogurt
2 teaspoons vanilla extract
1 ½ cups rolled oats
¼ cup shredded coconut
¼ cup roughly chopped walnuts
⅛ – ¼ cup chocolate chips (or raisins)
1 ½ teaspoons ground cinnamon
⅛ teaspoon ground nutmeg
⅛ teaspoon salt
1 egg white
1 cup milk
1 teaspoon baking powder
¼ teaspoon baking soda
