This black-eyed pea salsa is super simple, healthy, and perfect to serve to a crowd.
Ingredients
1 large avocado, diced
2 Tbsp red wine vinegar
2 Tbsp olive oil
Juice of 1 lime
2 tsp minced garlic
1 15 oz can black-eyed peas, rinsed and drained
1 15 oz can corn, drained
1 4 oz can sliced olives, drained
1/2 cup cilantro, chopped
1 cup grape tomatoes, quartered
Salt to taste
