Chocolate, cherries and coconut together in a pancake stack. This single-serving pancake recipe is also vegan.
Ingredients
For the pancakes:
1 ½ teaspoons flaxseed meal
1 tablespoon water
¼ cup rolled oats
¼ cup frozen cherries
¼ cup pumpkin or squash puree
1 tablespoon cocoa powder
3 tablespoons almond milk
2 teaspoons maple syrup
½ teaspoon vanilla extract
¼ cup spelt flour
1 teaspoon baking powder
Pinch of salt
½ – 1 tablespoon shredded coconut
Toppings:
Coconut yogurt
Shredded coconut
Chocolate chips (optional)
Cherries (fresh or candied)
