These white chocolate blueberry oatmeal cookies are crispy on the edges, yet still soft and chewy in the center.
Ingredients
½ cup unsalted butter, room temperature
½ cup white sugar
½ cup light brown sugar
1 large egg, room temperature
2 teaspoons pure vanilla extract
1 cup plus 2 tablespoons all-purpose flour
2 teaspoons cornstarch (optional, omit for a crunchier cookie)
½ teaspoon salt
½ teaspoon baking soda
¼ teaspoon baking powder
1 cup old-fashioned oats
⅔ cup white chocolate chips or chopped white chocolate
1 cup fresh blueberries
