Blueberry pancakes

Who doesn’t love Pancakes? These are amazing – gorgeously light and fluffy and stuffed full of delicious fresh blueberries. I promise you will adore them!
Ingredients
1 Cup flour
1 Tsp baking powder
½ Tsp baking Soda
½ Tsp salt
2 Tbs sugar
1 Cup coconut yoghurt
¼ Cup melted dairy-free spread or neutral oil
2 Eggs – separated
Juice and zest of one ripe lemon
1 Cup fresh blueberries, washed.
