Boston Cream Pie – the pie that isn’t really a pie – in breakfast form. For this breakfast, baked oatmeal ‘cakes’ are filled with a vegan maple custard and topped with melted chocolate.
Ingredients
For the Maple Custard Filling:
1 tablespoon cornstarch (cornflour)
2 tablespoons maple syrup
½ teaspoon vanilla bean paste
1 cup almond milk
For the Baked Oatmeal:
½ cup applesauce
1 teaspoon vanilla extract
¼ – ½ teaspoon butter extract
⅔ cup almond milk
1 – 2 teaspoons maple syrup (optional)
½ cup rolled oats
¾ teaspoon baking powder
Good pinch of salt
Melted dark or semi-sweet chocolate
