2 tablespoons extra virgin olive oil
1/2 large zucchini, roughly diced
1/2 large yellow squash, roughly diced
1 teaspoon salt
1/2 teaspoon chili powder

5-6 eggs
5-6 small corn tortillas
2-3 medium potatoes (I used yukon gold), diced into 1/2″ chunks
1/2 small red onion, roughly diced
