Surprisingly healthy baked oatmeal filled with chocolate and peanut butter! Gluten-free and vegan too.
Ingredients
For the peanut butter layer:
3 tablespoons peanut butter
2 tablespoons applesauce
¼ teaspoon vanilla extract
3 tablespoons almond milk
2 (dried) dates, finely chopped
⅓ cup rolled oats
¼ teaspoon baking powder
For the chocolate layer:
½ cup pumpkin or squash puree
2 tablespoons cocoa powder
1 ½ tablespoons maple syrup
½ teaspoon vanilla extract
⅔ cup rolled oats
½ teaspoon baking powder
Pinch of salt
⅓ cup almond milk
2 teaspoons peanut butter
