Cajun Red Beans and Rice
For your Mardi Gras menu you can’t go wrong with Red Beans and Rice, a traditional creole dish, with a little cajun seasoning tossed in to make it the best of both cuisines
2 tbsp olive oil
1/2 onion, diced
1 bell pepper, seeded and diced
2 ribs celery, diced
1 1/2 tsp Cajun seasoning, or to taste (homemade recipe below in notes)
3/4 tsp salt
1/2 tsp dried oregano
2 garlic cloves, minced
1 (15 oz can) red beans, rinsed and drained or 15 oz red beans prepared from dried beans
1/4 cup water or bean liquor (water left in pan after cooking beans)
1 (14.5 oz can) diced tomatoes
1/4 tsp freshly ground black pepper
4 cups hot cooked long grain rice
