Carinthian Pasta

Carinthian pasta – a pasta speciality from the south of Austria, filled with potatoes, curd and herbs. The ornamentally twisted edge is characteristic for this pasta.
Ingredients
250g durum wheat semolina
1 egg
1Tsp salt
3Tbsp olive oil
6Tbsp water
250g curd
250g floury potatoes (cooked)
2Tbsp chive (chopped)
1Tbsp parsley (chopped)
1Tbsp mint (chopped)
1Tbsp onion (finely diced)
2 garlic cloves
10 small tomatoes
80g butter
salt
pepper
