Carrot Cake Oatmeal Pancakes
Easy carrot cake pancakes that are gluten-free, dairy-free and refined sugar-free. To ensure these are gluten-free, use certified GF oats. (Also note they are only dairy-free if you leave off the optional cream cheese frosting)
For the Pancakes:
1⅓ cups rolled oats
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
1 tablespoon maple syrup
2 teaspoons vanilla extract
1 teaspoon blackstrap molasses
1 teaspoon lemon juice
¼ cup almond milk
2 eggs
1 cup finely grated carrot
⅓ cup canned crushed pineapple
3 – 4 tablespoons shredded coconut
2 – 3 tablespoons raisins
Toppings:
Simple Maple Cream Cheese Frosting
Maple syrup
Chopped walnuts
