Quick and easy to make and very tasty. These fritters combine particularly well with feta cheese, the saltiness of the feta perfectly balancing the natural sweetness of the fritters, so try them with a simple Greek-style salad of tomato, olive, feta, cucumber and red onion
Ingredients
200 g organic carrots, finely grated
100 g cashew nuts
1 medium sized onion, grated
2 organic free range eggs, beaten lightly
75 g bread crumbs
2 tbsp fresh coriander, chopped
1 red chilli, deseeded and finely chopped
½ tsp salt
Freshly ground black pepper, to taste
3 tbsp olive oil
lime or lemon wedges, to serve
