Cashew Coconut Fried Rice
Ingredients
120g jasmine rice, cooked and cooled
Vegetables (I used 1 carrot and 2 handfuls of mangetout), chopped
Handful of cashew nuts
Half a bunch of coriander, chopped
2 tbsp cashew butter
8 tbsp light coconut milk
2 garlic cloves, chopped
1 tbsp ginger
1 lime, juiced
2 tbsp soy sauce
2 tsp toasted sesame oil
