Cashew Flour Fig Pinwheel Cookies

Raw cashews are ground into flour to create a gluten free and grain free dough. Fill with homemade fig puree for a delicious and healthy dessert.
Ingredients
1 cup fresh figs, stems removed and cut into quarters
1/4 cup water
1 tablespoon chia seeds (or 1 egg minus the water)
3 tablespoons water
3/4 cup raw cashews
6 tablespoons coconut flour
1/4 cup coconut sugar
1/4 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla powder or extract
1/4 cup coconut oil
