“Cheezy” Broccoli Lentil Bowls
Packed with nutrients and healthy ingredients, these bowls are great for lunch or dinner. They have a delicious “cheesy” flavour from the homemade vegan cheese sauce and it pairs well with the broccoli and sweet potatoes!
For the Sauce:
1/2 cup white kidney beans
2 tsp lemon juice
1 clove garlic
1 tsp apple cider vinegar
1/8 tsp turmeric
1 tsp almond butter
3 tbsp nutritional yeast
1/4 cup water
For the Lentils:
1 cup brown lentils
2 cups vegetable broth
1 tbsp nutritional yeast
1 teaspoon garam masala
1/2 tsp turmeric
Salt and pepper to taste
For the Bowl:
1 cup rice, cooked as per instructions
1 cup broccoli, steamed
1 cup sweet potato, sliced and roasted
2 cups spinach
1/2 avocado, sliced
