Cherry, Almond and Chocolate Baked Oatmeal

A single-serving baked oatmeal with plenty of chocolate chips and cherries. Almond extract also adds a slight marzipan taste. Vegan and gluten-free.
Ingredients
⅓ cup frozen cherries
⅓ cup almond milk
½ cup rolled oats
⅓ cup applesauce
¼ teaspoon baking powder
Pinch of salt
½ teaspoon vanilla extract
¼ teaspoon almond extract
1-2 tablespoons chocolate chips
Optional mix-ins: Chopped cherries, slivered almonds and/or dried cherries
