Chickpea Potato Salad made fresh with cooked chickpeas, boiled potatoes, cherry tomatoes and homemade fresh mint and apple cider dressing.
Ingredients
1 cups dried chickpeas (yields approximately 3 cups fully cooked) or use 2 cups canned
3 medium sized potatoes (boiled and cubed)
8-10 cherry or grape tomatoes (halved)
1 cup iceberg or romaine lettuce
1 cup red cabbage shredded
2 tbsp fresh mint leaves (chopped)
2 tbsp apple cider vinegar
1 tbsp extra virgin olive oil
1 tsp paprika
½ tsp salt
