A quick and easy vegan meal which can be prepared in advance and quickly thrown together. Flavourful and full of protein, these fritters can be served with salad or light vegetables of your choice.
Ingredients
400g can chickpeas, drained
300g sweet potatoes, peeled and cut into small chunks
1 tbsp tahini
5 spring onions, finely sliced
1 red chilli, finely sliced
1 tbsp plain flour
1 tbsp olive oil
Sea salt to taste
