Chickpea Veggie Burgers (Gluten-Free)
Veggie burgers are the quintessential vegetarian food – and for good reason, they can be delicious! Unfortunately, veggie burgers can often taste like mushy slabs of blended brown rice. After some trial-and-error, my favorite veggie burgers are these chickpea patties, which are moist without being mushy, and are healthy without being dry. And, as an added bonus, you can store leftover chickpea patties in the freezer!
4 oz (120g) peeled and chopped pumpkin
1 cup cooked chickpeas
¼ cup vegetable broth
¼ teaspoon dried oregano
2 sage leaves, chopped
1/8 teaspoon garlic powder
1/8 teaspoon chili flakes
Salt and pepper, to taste
¼ cup grated carrots
2 tablespoons polenta (cornmeal)
