Chocolate Cake (Butter-Free)
This chocolate cake is moist, light and 100% butter-free! Don’t be surprised when you see the pumpkin puree and coffee in the recipe – you can’t taste either, promise. The pumpkin adds moisture and the coffee somehow intensifies the chocolate flavor (it’s cake magic)
Plus, there’s a recipe for a butter-free frosting!
½ cup (120mL) milk
1 teaspoon lemon juice
1 cup (125g) spelt flour
½ cup (55g) cocoa powder
1 tablespoon cornstarch (cornflour)
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 large eggs
½ cup (135g) pumpkin puree
¼ cup (60mL) strong coffee
½ cup (105g) sugar
2 tablespoons maple syrup
2 tablespoons canola oil
1 teaspoon vanilla extract
