Chocolate Chip Pecan Oatmeal Cookies

A small batch of super satisfying hearty oatmeal cookies you can make in your toaster oven!

1/3 cup pecan pieces
2 tablespoons unsalted butter, softened
1/4 cup + 1 tablespoon packed organic brown sugar
1 tablespoon + 1 ½ teaspoons well-beaten egg
1/2 teaspoon pure vanilla extract
2 tablespoons unsweetened applesauce
1/2 cup white whole wheat flour (or all-purpose)
3/4 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/8 teaspoon baking powder
1/8 teaspoon salt
1/2 cup old fashioned rolled oats
1/3 cup semi-sweet chocolate chips
