Chocolate Fudge Caramel Overnight Oatmeal
This is healthier than it seems – the caramel is mostly made from dates! And if you’re a salted caramel fan, it’s super easy to turn this into Chocolate Fudge Salted Caramel Overnight Oatmeal!
For the overnight oatmeal:
½ cup rolled oats
½ cup yogurt
¼ cup milk
1 tablespoon cocoa powder
2 teaspoons sweetener of choice
½ teaspoon vanilla extract
1 tablespoon chocolate chips, melted and cooled slightly
Optional topping ideas: Chopped nuts, sprinkles, chocolate chips and/or candied cherries
For the (salted) caramel:
3 soft medjool dates, pitted and chopped
1 tablespoon yogurt
2 tablespoons milk
½ teaspoon maple syrup
¼ teaspoon vanilla extract
Pinch of salt (optional)
