This easy to make and crazy delicious Superfood Granola recipe is packed full of breakfast power foods like big chunks of crunchy granola, lots of nuts, coconut and blueberries.
Ingredients
2 cups rolled oats (use gluten-free, if needed)
1 cup unsweetened shredded coconut
½ cup each: pumpkin seeds, whole almonds, whole pecans, peanuts
¼ cup quinoa
½ cup dried blueberries
¼ cup each: chia seeds, hemp hearts, and cacao nibs
½ cup honey (sub maple syrup for vegan)
2 tablespoons coconut oil
2 tablespoons peanut or almond butter
½ teaspoon sea salt
½ cup chopped dark chocolate or chocolate chips
