This looks and tastes like dessert, but it’s surprisingly healthy! The “hidden” banana and pumpkin provide sweetness and fudginess to these pudding-like overnight oats. Plus, it’s gluten-free and vegan!
Ingredients
1 very ripe banana
1 cup pumpkin puree
3 – 4 tablespoons Dark Chocolate Dreams peanut butter
3 tablespoons cocoa powder
1 tablespoon chia seeds
1 teaspoon vanilla extract
⅔ cup rolled oats
1 cup almond milk
1 tablespoon maple syrup, or to taste
Chopped nuts, chocolate chips and/or peanut butter, to serve
