A fall and winter favorite! This chunky tomato basil soup is a hearty meal for cold weather plus it’s healthy and delicious!
Ingredients
2 tablespoons olive oil
2 yellow onions, chopped
8 cloves garlic, minced
2.5 ounces fresh basil leaves, chopped (or 1.5 teaspoons dried basil)
3 28-ounce cans peeled whole tomatoes, including juices/puree
3 cups vegetable stock
2 tablespoons butter
1 teaspoon baking soda
Sea salt to taste (I added no salt)
Grated Parmesan cheese for serving
