This Cilantro Lime Breakfast Quinoa is packed with whole grains, veggies, and topped with a fried egg!
Ingredients
1 cup quinoa, dry
2 cups water
1 tablespoon extra virgin olive oil
1 small zucchini, chopped and quartered
1/2 large avocado, diced
1 cup grape tomatoes, halved
1/2 teaspoon salt and pepper
1/2 teaspoon red chili flakes
2 tablespoons cilantro leaves
squeeze of half a lime (or more if you love lime!)
3-4 eggs (omit if vegan)
