Citrus Funfetti Cookie

The ultimate funfetti cookie. Soft, chewy cookies with the crunch of the funfetti topped in the citrus glaze. You need no reason to celebrate with these.

1/3 cup coconut flour
1/3 cup arrowroot flour
1 tsp cream of tartar
3/4 tsp baking soda
1/4 tsp salt
1/4 cup orange juice (or lemon juice)
orange zest, from one orange
4 Tbsp coconut oil
1/4 cup coconut butter
2 Tbsp honey
1 tsp vanilla
1 flax egg
2 Tbsp confetti sprinkles

Glaze:
1-2 Tbsp freshly squeeze orange juice
1/4 cup coconut butter
