Coconut-Cherry Parfaits With Raw Chocolate Cookie Dough
These parfaits are the best possible thing to ever wake up to – healthy, fresh, completely raw and totally delicious. Layers of coconut whipped cream, cherries, almonds and raw chocolate oat cookie dough make up these parfaits, and while these parfaits are sweet and delicious enough to eat as dessert, they’re also healthy enough to eat first thing in the morning…or any time of the day.
1 can full-fat coconut milk, placed in the fridge overnight
1 teaspoon vanilla extract
½ cup pitted and sliced cherries (or other fruit of choice)
¼ cup slivered almonds
¼ + 1 tablespoon oats
1 tablespoon softened coconut oil
1 tablespoon brown sugar
3 teaspoons cocoa powder
½ teaspoon cinnamon
½ teaspoon vanilla extract
Pinch salt
Optional: Sweetener of choice, for the whipped cream
