Cold Tahini Noodle Salad

Cold udon noodles, tossed with edamame and shiitake mushrooms. Dressed in beautiful and creamy tahini sauce.
Ingredients
½ cup tahini
2 Tbs rice wine vinegar
2 Tbs agave or maple syrup
3 tsp liquid aminos
2 tsp toasted sesame oil
1 9 oz pack udon noodles, rice noodles for gluten free version
1½ cup shelled edamame, thawed if frozen
8 oz shiitake mushrooms, patted dry and sliced
pinch of salt
1 tsp coconut oil, for mushrooms
avocado for topping, optional
