Ingredients
1 flax egg (1 Tbsp. flax meal + 3 Tbsp. water)
½ cup melted coconut oil
⅔ cup coconut sugar
1 tsp. vanilla extract
2½ cups GF oats, ground into a flour
1 tsp. baking soda
1 tsp. cinnamon
¼ tsp. salt
1 Tbsp. grated ginger root
½ cup fresh cranberries
⅓ cup chopped dark chocolate or vegan chocolate chips
