Cranberry Oatmeal Ovenight Chia Coconut Pudding
Perfect for a fall, cozy breakfast, you needn’t worry about spending time over the stove each morning. This overnight oatmeal is so hearty and filling, it’s perfectly suitable for even the chilliest of winter mornings, completely sugar and gluten-free, and is 100 percent vegetarian with a vegan option. It’s also incredibly filling compared to more common overnight oat recipes. Enjoy!
1/4 cup gluten-free organic oats (these are my new favorites, the only ones that don’t cause GI issues)
2 tablespoons chia seeds
3 tablespoons coconut flour
1/2 cup organic Greek style plain yogurt (you can use any kind)
1 tablespoon organic ground flax,
5-6 frozen cranberries (which are ridiculously low in sugar but high in nutrients)
1 teaspoon NuNaturals Simple Syrup stevia glycerite
and 1/2 cup water with 1 cup unsweetened almond milk
