2 tablespoons extra virgin olive oil
½ cup finely chopped celery (about 1 stalk)
½ cup finely chopped yellow onion (about ¼ large onion)
½ cup finely chopped carrot (about 1 large)
3 sprigs of parsley
1 dried bay leaf
6 cups low sodium vegetable broth
13 ounces precooked and peeled chestnuts
¼ cup dry red wine or Madeira
¼ cup half and half or heavy cream
Pinch of nutmeg
