Crockpot Cinnamon Coffee Cake

A tender and sweet coffee cake made in the crockpot without the use of any oven! It is filled with spicy cinnamon and hints of apples to make the perfect sweet treat.

1 cup white whole wheat flour
1 cup all purpose flour (or more white whole wheat flour)
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 Tablespoon coconut oil
3 Tablespoons egg whites
1 teaspoon vanilla extract
1/3 cup honey
1/2 cup applesauce
1/4 cup plain greek yogurt (I used 0% fage)
1/2 cup milk
1/2 teaspoon lemon juice

Filling:
1/4 cup brown sugar (or coconut sugar)
1 teaspoon cinnamon

Topping:
1/4 cup brown sugar
1 teaspoon cinnamon
2 Tablespoons flour
2 Tablespoons butter
