Curried Kumara (sweet potato) soup
Hearty Curried Kumara soup packed full of delicious vegetables, curry and chilli. Honestly, you’re not going to find much better than this!
Veggie:
800 grams (1.8 pounds) Kumara (sweet potato) – peeled and diced into cubes
400 grams other veggie of choice (we used red onion, carrot and celery in equal portions)
Spices:
3 TBS good olive oil
2-3 cloves garlic, grated
2-3 cm chunk fresh ginger – grated
1 tsp turmeric
1 tsp paprika
1 TBS curry powder (plus a bit more for seasoning at the end)
¼ – ½ tsp chili flakes (optional)
½ tsp salt
½ tsp freshly ground black pepper
Liquids:
1 can coconut cream (about 400 grams, or 14 ounces)
4-5 cups vegetable stock
¼ cup tomato paste
