Ingredients
2 cups carrots, sliced
2 cups cauliflower, 2-3 inch florettes
2 cups potatoes, 1 1/2 – 2 inch dice
1 cup red onion, 1 1/2 – 2 inch dice
1/2 tsp granulated garlic
1/4 tsp ground coriander
1/2 tsp cilantro leaves
1 TBSP curry powder
1/4 tsp black pepper
1/2 tsp salt
1/2 tsp cumin
dash smoked paprika
dash red pepper flakes
2 TBSP cooking oil
