Ingredients
Cookies:
1/2 cup coconut oil (both virgin and refined work)
2/3 cup cane sugar
1 tsp peppermint extract
1/2 tsp vanilla extract
3 tbsp aquafaba*
1 1/4 cups whole spelt flour
1/3 cup raw cacao or cocoa powder
2 tbsp arrowroot powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Optional: crushed candy canes to garnish
Chocolate Ganache:
100g semi-sweet or dark chocolate, chopped
1/2 cup full fat coconut milk
