This easy jar meal is filled with healthy calories, protein from the lentils and quinoa, roasted veggies, and a good tomato-y sauce with plenty of ginger and garlic.
Ingredients
Lentils:
1/2 cup french (or du puy) lentils
1 cup crushed tomatoes
1 clove garlic, minced
1 inch piece of ginger, diced
Roasted Veggies:
apprx. 1 cup Brussels sprouts, halved
1 yellow bell pepper, thinly sliced
1 red potato, sliced into tiny cubes
1/2 tsp smoked paprika
olive oil, salt + pepper
To Serve:
1/3 cup cooked quinoa
optional: arugula or spinach to garnish
