This lightened egg salad is made with a healthy hummus dressing as opposed to mayonnaise. It’s crunchy, sweet, and creamy.
Ingredients
2 hard boiled eggs, smashed with a fork
1/2 avocado, diced
2 stalks of celery, finely chopped
hummus dressing
1-2 scallions, chopped
1 tsp smoked paprika
1 tsp black pepper
(opt) Craisins and toasted almonds
