These Cashew Pancakes are wonderfully creamy, delicate and fluffy even though they are completely gluten free. Great option for breakfast or brunch on a lazy weekend.
Ingredients
1/2 cup cashews
1/3 cup buckwheat flour
1/2 cup + 2 tablespoons plant-based milk (I used cashew milk)
1 banana
1 teaspoon baking powder (gluten free)
coconut oil for frying
pinch of salt
maple syrup (optional) for topping
