Slices of green tomatoes get coated and lightly fried until they’re golden brown and crunchy on the outside and just barely soft on the inside. Then they’re topped with some mashed avocado and poached eggs. Perfect for breakfast, lunch or dinner!
Ingredients
1 large green tomato
Kosher salt
Freshly ground black pepper
½ cup all-purpose flour
1 large egg
1 tablespoon buttermilk
1½ cups panko Japanese-style breadcrumbs
½ – 1 cup olive oil, for frying
1 medium avocado
1 teaspoon fresh lemon juice, or more to taste
4 large eggs
